Having only really taken root in our soils about 30 years ago, the chardonnay grape (originally from France) tends to reflect its terroir like few others. Yet, it’s what happens in the cellar that makes all the difference…
Malolactic fermentation leads to a buttery chardonnay, while leaving the wine on the lees can create a creamy texture. Oak ageing will impart toasty, vanilla flavours, while no wood will allow green fruit flavours and minerality to rise to the fore and, of course, some of the finest sparkling wines in the country are either blanc de blancs (100% chardonnay) or are a blend that includes it.
